Tamales (Steamed)

INGREDIENTS:
20 Tamales
4 cans of beer


Pour ½ of each beer into Cooker.  Place the opened beer cans in bottom of CanCooker and put grate**on top of the 4 cans (cans hold the grate off the bottom of the cooker.
Place 20 Tamales on the grate.
Latch the lid and place on heat source. Once steam begins to vent, keep on heat source for 30-minutes (approx.). Remove from heat using oven mitts and let cool for a minimum of 5 to 10 minutes.
Tamales are steamed to perfection!  Serve with beans and rice.

Pinto Beans (Texas Style)
Ingredients:

1 lb dried Pinto Beans 
1 can Original Rotel Tomatoes 
1 medium Onion ( chopped ) 
11/2 tsp. Salt 3 strips of bacon ( cut in 1/2" pieces ) 
1 tsp Chili Powder 
1/2 tsp Garlic Powder 
1 tsp Ground Comino 
1/2 tsp chopped fresh Cilantro 
6 cups cold Water

Wash Pinto Beans and soak in cold water overnight. Add all ingredients to CanCooker and bring to a Boil over high heat. Put the lid on and reduce heat to simmer. Cook for 90 Minutes, turn off the heat and let stand with lid on for 15 minutes. ENJOY!!!

Corn on the cob   
Ingredients:
2 dozen ears of corn, shucked and cleaned
¼ bottle of CanCooker Butter Garlic Seasoning
1 stick of butter
Water


Spray the inside of the CanCooker with non stick cooking spray then insert the 2 piece stainless steel rack.  Tilt the cooker and insert the cleaned ears of corn standing on end (big end down) along the bottom until full.  Fill the CanCooker with water to the top of the ears of corn.  Add ¼ bottle of Butter Garlic Seasoning and 1 stick of butter.  Latch lid and put on medium to low heat source.  Once it starts venting steam keep on heat for 30 minutes.  Corn will be full of buttery flavor and delicious!

Country Style Peppered Gravy over Biscuits


Ingredients:
Morrison’s Country Style Peppered Gravy Mix  (1 ½ lb) 
-- you can find this brand at WalMart and Sam’s Club
Water
Biscuits – pre made

Combine 1 package (1 ½ lbs.) gravy mix with 1 quart (32 fl oz) water.  Mix with a wire whisk until thoroughly blended.  Set aside.

Add 3 quarts (96 fl oz) water to the CanCooker and bring to a low boil.

Pour gravy mixture into boiling water, stirring vigorously.  Continue heating until mixture thickens, approx. 1 minute.  Serve

Yields 1 gallon of gravy.

Pour over Biscuits and Enjoy!
